Week 51: Dec 16th-22nd= More home time goodness

Since I was home, I am slacking on the updates. I credit that to just enjoying my time home too much. But, today I am back and it was back to work for me so before the new year begins... I am finishing up my last year's resolution tonight!

1. I went to the movies with my sister. We went to see Delivery Man, I love me some Vince Vaughn and popcorn.

2. Had pizza and drinks at my other sister's house and my dad and his wife stopped by.

3. Baked Christmas cookies with my god daughters and best friend and watched How the Grinch Stole Christmas (original, cartoon version..my fave!)

4. Christmas shopping with my sister and J in Portland

5. Went to the movies with a couple of friends. Saw Anchorman 2, which was absolutely hilarious!

Week 41: Oct 7th-13th ....whoops!

Doh. I totally and completely forgot about writing on Monday. I didn't actually remember until last night when I thought "Did I write on Monday? I must have, but I really don't remember" then sure enough I checked when I got home today and whoops! Totally spaced. I blame that on: J got back into town Sunday night, so we spent most of Monday lounging around the house and catching up.

Better late then never; My 5 things:

1. I got bangs! Pretty huge eh? I've have side-swept bangs before, but never full on, no turning back, blunt, straight across bangs. I even went to an actual legit hair salon and not just the beauty school. I also decided since I was there I should probably trim my hair since I haven't in over 2 years. It was well over due. On the plus side, it still looks long even with over an inch cut off. Woo! I showed the stylist photos of Zooey Deschanel in my phone and said "I want these".
Sporting new bangs (and sweet sweat pants!) giving love to my pup
2. I baked Banana Nutella swirl bread in celebration of J's return from Oklahoma. Nutella with anything is delightful, and this bread did not disappoint.

3. I got started on my cover letters for internship applications. First applications are due November 1st!! Ack!!

4. I watched the entire last series of Gossip Girl in one day. Now, I probably shouldn't be proud of that...but J was out of town, and I was pretty stressed out, so it was an excellent distraction. Netflix is killing me though! So many shows have new seasons up and I want to watch them ALL right now!! Then I have months of no new episodes.

5. I took the pup on a legitimate walk. He is post-surgery (hence, the cone in the photo above) so he is not supposed to engage in a lot of physical activity, but this pup is active! So I put on my running shoes and some gear to walk in and we went around the neighborhood. It was only a little under a mile, but it was good for both of us to get outside.

Week 39: Sept 23rd-29th- Dissertation Proposal Defense=SUCCESS!!!

First off, let me start by saying: I SUCCESSFULLY DEFENDED MY DISSERTATION PROPOSAL!!  I passed! it was approved!!
Granted, I have a laundry list of changes that need to be made including but not limited to changing my entire data analysis section and rewriting/reorganizing my entire literature review.
BUT IT WAS A SUCCESS!!! Regardless of how much I need to do based on it, it is no longer standing in my way of applying to internship!!

My 5 things:

1. I left practicum early Thursday,  I decided I needed some extra time to clear my mind and decompress before the big day (I defended my dissertation proposal on Friday morning)

2. Baked some pumpkin Nutella swirl cookies in an attempt to distract myself from the anxiety overload on Thursday night.

3. I SUCCESSFULLY DEFENDED MY DISSERTATION PROPOSAL!! Ok, ok, I know I already said that...but it deserves repeating...and making the list!

4. J and I went to dinner Firday night to celebrate. We decided to try out a new place in Oakland, I voted for Italian...mostly just because I wanted to free bread you get ASAP ;)

5. J and I also treated ourselves to a movie Sunday evening. SCORE because it was $5 movie day at the theater in downtown Oakland. We saw the movie Prisoners...which was AMAZING!! Such an awesome suspense-thriller-mystery with an incredible cast. We had never even heard of the movie, just decided to treat ourselves and looked at what was playing. When we left the theater J said "Now, that is worth owning".

Week 38: Sept 17th-22nd: Saying goodbye to my dear old companion

I have to defend my dissertation proposal this Friday. I'm fighting off an illness as we speak and I'm totally not prepared for my proposal defense. This upcoming week is going to be hell.

As for last week...

My 5 things:

1. Took the original Riley in my life, the Jetta to the junk yard of Friday. Now, this was actually really difficult for me.

The Jetta and me before parting ways 9/20/13
I cried. Even though the Jetta's been parked in the garage, not being used for over a month now and even before that I was not the one driving it, saying the final good bye was hard. I owned that car for 11 years... 11 YEARS! It had 67,000+ miles on it when I got it, and it ended with 194,000+ miles. I was really hoping to take it to 200,000 just like Marshall had hoped:
From the episode Arrivederci, Fiero: How I Met Your Mother

2. I baked my very 1st apple pie. I cannot believe how SIMPLE it is to make fruit pies. One of the easiest desserts ever. Granted, it wouldn't be so if I was not using a premade crust. Someday, I will make my own crust but for now, the ready-to-bake crusts will work for me.

3. I took a nap yesterday. I'm fighting off sickness and have waaaaay too much coming up soon that I need to be present, alert, oriented and WELL for.

4. We have some house guests staying with us so J has been acting as a tour guide and showing them the sites of San Francisco. It is fun to tag along, since the only time I ever seem to go over there is when I'm with people who are visiting.

5. Spent a whole day doing laundry, going grocery shopping, cleaning house, preparing dinner. Taking care of the home. It's a bitch to do some times, but it really is worth it.

Week 36: Sept 2nd-8th. Struggling to stay awake.

This last week was actually pretty tough to come up with much. I have really been lacking energy in a major way and battling just to be awake at any given time. This makes it a little difficult to go above and beyond baseline.

My 5 things:

  1. I went running 1 time. It saddens and frustrates me that I'm not doing this more. I'm noticing a negative impact on my body from my lack of exercise but I just cannot seem to find the energy or motivation for it. I know I can't be running every day, but I could be doing something active. I wonder what it is going to take to get me out of this slump?

  2. Baked strawberry banana muffins. I chose a healthier recipe than my usual, which didn't taste as good but made for excellent grab and go snacks throughout the week for J and me.

  3. I had an issue come up with the residents recently. Apparently, only 2 weeks in and I had already made a name for myself and I believe the name they used was “bitch”. I wrestled with how to handle this (should I let up a bit, am I being too hard on them?) but then I decided instead to ask the other counseling trainees to step up their authority and meet me closer to where I am at in terms of holding the residents accountable for their actions and enforcing the rules (the things I did to get the label of “counselor everyone avoids”). The other counselors really did a great job and we're now all less liked than before, but at least it is a general dislike instead of a targeted hatred toward me...but most importantly it is for good reason. I'm glad I decided to handle it the way I did and not just slump down in defeat or suffer silently. I spoke up for what I believed in and for what I stood for, and asked that others support me in this.

  4. I arranged a phone meeting with a former intern from one of the sites I'm planning to apply to for internship. I despise phone calls, talking to strangers, and most importantly talking to strangers on the phone... but I decided it was a smart move to reach out. I got some great feedback, advise, and overall knowledge about the site and it was definitely the right move.

  5. I bought shoes and earrings to go with my dress for being the maid-of-honor in my best friend's wedding. About time too since the wedding is THIS Saturday.

Week 33: Aug 12th-18th-My 1st PIE!

It is 9pm and I just now realized it is Monday.
Ok, that is not entirely true. I was at work today, so I obviously knew which day of the week it was, but it was not until this moment that I realized today is the day I write. Initially I thought "oh well, I'll just write tomorrow and be a day late" but then the other part of my brain yelled back "what kind of attitude is that?!". Again, that may not be entirely true but... true enough.

So here it is, my 5 things:

1. I went running yesterday! Finally! I just checked back and I haven't gone on a run since mid July. Wow, thinking about that bums me out a little. Granted, I did a lot of hiking in Hawaii and I did a 2 mile walk the other day, but I haven't ran in a month? Shame on me. Needless to say, I am incredibly thankful I did. I'm sore in the best way (still able to move but sore enough to know my body accomplished something). I've been lacking energy MAJORLY lately, as in constantly falling asleep while sitting, reading, etc. I know it is from my lack of movement, but feeling that lethargic makes it that much more difficult to get up and get going. I need to put in more effort here. How many times do I have to write that each week before I actually DO IT?!?

2. Finished reading my book. It was an awesome read! Gone Girl by Gillian Flynn. I recommend it for anyone looking for a quick and entertaining book. I finished just in time too because I got my dissertation proposal edits back the same day. Whomp whomp!

3. I baked my 1st ever pie! Strawberry Rhubarb. It just so happens to be mine and J's favorite pie. I think it turned out pretty well actually. J had some critiques about it but that was because he's basing it off his grandma's perfected recipe. I'd say for a 1st timer I did pretty dang swell. (Ok, ok...I used a pre-made crust, so I am somewhat of a cheat but, I'm still learning!)

4. I made homemade coleslaw. Not that this is some super difficult task, it was actually quite simple, but still. It is something I had never ventured into and therefore knew nothing about. We had the 2nd portion of our humongous pork butt (... I can't help but giggle at that sentence) left and J said it was time to make a million pounds of pulled pork again. I decided to make a more general version in order to make it easier to do more things with the pulled pork (and not have to have BBQ everything). So I decided to also make some coleslaw to accompany our 1st of many pork meals: BBQ pulled pork sandwiches. I've never been a huge coleslaw fan, but I kept seeing BBQ pulled pork sandwiches paired with it so I decided it was time. J said he wasn't much of a fan of the stuff either but he ate my batch with a smile. Success!

5. Friday I get a text from a friend I knew when I went to University of Hawaii who I hadn't seen in years. She was in town and she and her friends had an extra ticket to the A's game that night against the Indians. Despite my 4am wake up that morning for work, I decided I needed to get out and do something, be social. I accepted her offer and ended up having an awesome time. Took the Bart to the game, the ticket deal came with a soda, hot dog and peanuts. No baseball game is complete with out that ;) Although, J called me a traitor for going to an A's game, because we're definitely a Giants house. Oops.

Week 23: June 3rd-9th 2013 No more pencil, no more books, no more teacher's dirty looks!

Oy! I almost forgot to post today!
I cannot have 2 weeks in a row where I'm late, that is just bad form.
So this past week something somewhat monumental occurred. I attended my last class ever in my graduate career. Apparently, I've learned everything I can in the classroom, and now it's just working in the field and on my dissertation. Crazy. Speaking of...I'm supposed to have my 1st draft of my proposal by this Friday. I'm at about 17 of the 50 pages I need. This should be an interesting week.

My 5 things:

1. I baked cookies in celebration of my last day of class. It was all I could do to stay sane knowing I had a 60 minute group presentation and a 15 minute individual presentation looming the following day. I really know how to go out with a bang...my last class ever was spent in front of the class for about half the 3 hour class.

2. After I attended my last official class of my graduate career, I went over to to Chevy's (which is across the street from my school's clinic campus) with some girls from my program to celebrate. I only had an hour to spare as I needed to be in research group at 5pm and class got out at 3:50pm. Just enough time to enjoy a happy hour margarita, shoot the shit with some friends and load up on chips and salsa.

3. J and I took our free movie ticket and went to see a movie Saturday night. only having to pay for 1 ticket feels like it's a treat ;) I'd been wanting to go see The Great Gatsby, but since we'd been dragging our feet to get to the theater for weeks, it was no longer playing at the Regal's by our house. Instead, we went to see The Internship. That is how much I love J (well, and Vince Vaughn). The fact that I was willing to sit through 2 hours of my arch nemesis (and PAY to do so!!) tells you how much I love them. I absolutely despise Owen Wilson. I cannot stand the way he talks, his facr, his mouth, his voice... hell I never saw the movie Cars...just because he did the voice for the animated movie! That is how much I despise him. I usually boycott his movies, but will admit.. when Vince Vaughn is in them... I make an exception.  The good news is: the movie was good enough that I could almost tolerate his bleached-butt-hole-looking lips and that annoying voice. Plus, I love popcorn.

4. I called my sister who I hadn't talked to in awhile and had a really great talk. J referred to us as "2 hens in a hen house...cackling away". It's rare enough to find a friend like that, and even more so to share 50% of your DNA with them. I hate that I'm so far away, but when she and I are able to have a talk like that where we just really get each other, and can laugh, and relate... it feels like I'm right there with her.

5. I tried my hardest to sleep in on the weekend. I think I made it until about 8am...and that was pushing it.

Week 21: May 20th-26th...any day now

I was going to start out with how it is "that time of year" when everything piles up and I feel like I might explode...but then I realized, when is it NOT that time for me?  We're nearing the end of the quarter so it feels more so than usual, especially since I'm supposed to somehow have a 1st draft of my dissertation proposal by 6/14 and let me just say, I am definitely no where near close to having that (it's about a 40-50 page proposal of which I have maybe about 5 pages written). Add that to everything else that is going on plus trying to be somewhat excited about a trip to Hawaii that we're planning, having to worry about moving in July, and trying to not completely dread this birthday I've got coming this week. I could really use some major stress relief. Any day now.

My 5 things:

1. Went running. Unfortunately, only once...again. I went on Tuesday, and actually had to stop partway through it because of my injury. It started hurting pretty severely at just under a mile and a half. I decided not to push it and the whole rest of the day I was in pain. This pain continued (although dulled) over the next few days which lead to my pathetic running count of 1 for the week.

2. I actually wrote in here, not just on my usual Monday update. It is rare I find the combination of time/energy/motivation to sit down and compile my thoughts into print but when the planets align, it really is a wonderful outlet. There is always so much spinning around in my head and when I'm able to release an ounce of it here or there it makes a world of difference.

3. I baked cookies on Saturday for a BBQ I was attending on Sunday. I made my now-becoming-a-staple peanut butter cookies. I ran into a problem when I realized I was stuck at home without a vehicle and didn't have an eggs. Thankfully, I was able to get creative and utilized a substitute that, while it sounds disgusting, turned out to work pretty well. I only needed one egg, and a couple tbsp of mayonnaise did the trick just fine. They were a big hit with everyone, until I told J the magic ingredient and then he decided they were "gross".

4. Saturday evening my friend Rob who was down in the area for business came over to our side of the bay to get some drinks in early celebration for my birthday. Rob, J and I went to Alameda to a bar and got some drinks and toasted to me turning yet another year older. Thankfully, Rob is turning 30 this year so I didn't feel so old. I drank too much, which rarely happens and I didn't have to drive, which also rarely happens (and is likely why the 1st thing is a rarity).

5. Sunday, in all my hungover glory, we went to a BBQ at Rob's sister's house. There was tons of delicious food to which I made sure to eat any and everything available to me. I'm not sure why, but when I'm hungover it is like I am unable to get full. I just want to eat all day long....so I did. It was nice to be outside in the sun, eating wonderful food.

Week 18: April 29th-May 5th: Worrying myself sick, literally

So typical. The minute I stop worrying about practicum interviews, I get offered two, BOTH while I'll be out of town. Ain't that a bitch?
One of the offers is from my number 1, top choice site from the initial round that didn't even offer me an interview before. It's working my my favor that it's late in the game so a lot of students have already accepted offers at other sites so there is a smaller, less competitive pool for them to choose from. Honestly, I'm fine with that because the thing is, I don't have any experience working with that population, so there is less of a reason to give me a chance. What I do have is motivation and charisma and when the pickins get slimmer, that is more likely to matter. The unfortunate thing, is that they're doing a group interview on the 13th (that they've invited me to) and when I spoke with the director on the phone, she said that if they don't find their placement on Monday that they may be able to meet me on Tuesday. Bummer. but there is also a site that wants to meet with me and is a little more flexible with time so I suppose if this one doesn't work out, the other one may.
But really, my main focus at this point is my Oral exam tomorrow. I go at 9am. There is a lot riding on this exam. It determines whether or not I get awarded my M.S., whether or not I can defend my proposal, and whether or not I will even be eligible to apply for internship. I know, I know, I can always retake it in a few months and there are other factors that may also prevent me from applying on time even if I did pass, but this exam is 3 years in the making. I've been dreading this exam since Fall 2010 when I entered into this program and I just want it to be over with already and not be drug out for another couple of months while I try to prepare all over again.
To top it all off: I'm getting sick. My body is so angry with me with all this stress and it just wants to give up. I worry that I'm going to spend my entire Vegas vacation sick. I'm trying my best to keep hydrated, to get as much sleep as my body will allow and loading up on EmergenC but despite all my best efforts, it's still creeping up on me. :/

Anyway, amidst all of that, here are my 5 things:

1. I went in an extra day to practicum to get more hours. Even though, with how chaotic things are right now with Orals and research deadlines, that was perhaps not the best decision, but it was only a half day anyway.

2. I went running three times. I finally feel like a runner again (well, I never really felt like a real one, I've always felt like a wanna-be) but I at least feel like a wanna-be runner again, and not just a total fake or failure.

3. I baked cookies yesterday and they were a big hit at the BBQ we went to.

4. I did another study session via Skype with a friend on Saturday. We went over materials for Orals from about 10am until 3pm with only a short break due to computer malfunctions. I'm really trying to get this Oral exam right the first time so as not to have to delay everything and take it again. Hopefully all this studying will pay off.

5. Yesterday was Cinco De Mayo and we went to a friend's house for a BBQ. It is a friend here, whose family has really been great and welcoming to me and J since we don't have family here so it's nice to be able to see them and spend some time with them. Plus there was some excellent food to enjoy :)

Week 17: April 22nd-28th: The calm... that hopefully won't be followed by a storm

So It's yet another Monday and I am still practicum-less. I applied to 1 more site and have heard back from a 2nd one that they officially received my application and are now reviewing all the applications. The email included about 18 other students, so I'm not going to hold my breath. It's my top choice site too.
I had sort of a  revelation at some point last week, sort of a calm that just washed over me about all this practicum stuff. Yes, it's stressful not knowing, of course I'd prefer to have a placement...but with everything I've got going on, I can't afford wasted energy on this issue. I've done what I can, I've applied to some places and now I'm just going to wait. I'm going to wait, and not worry and focus on what matters in this moment: ORALS!

My 5 things:

1. I went running twice, which is an improvement from last week, although my knee is still bothering me. The second day of running I went over to Alameda with J and we both ran. Granted, he runs much faster and farther than I do, so we don't actually run together but we do our warm up walk and stretches together. It's nice to know he's there doing the same thing though, even if I can't run with him.

2. I baked: twice this week. That's also how you know the stress is piling up. I baked banana-blackberry-oat muffins for us to take with us to work, etc and then I baked chocolate chip cookies last night for a treat. I recently purchased wheat flour due to the hype about it being better for you. I won't lie, it just isn't very good in cookies. I can handle it in the muffins and breads I've made, but cookies are just made to be baked with white flour and that is just all I have to say about that. I guess it could just be an acquired taste, like when you first switch to wheat bread. Jury is still out I suppose.

3. Did yoga twice this week. I really need to invest in a yoga mat. I use videos on YouTube of different types of yoga, recently I've been trying flow yoga and I like it but the rug we have out on the front room is just not cutting it for trying to hold some of those poses. I need to stop being a cheapskate and just get a mat, they're like $10.

4. Sunday I had a study session via Skype with a friend for almost 3 hours, going over materials for our Oral competency exams. Definitely helped me a LOT to feel like I semi-have an idea now about what it entails and what I'm expected to know. I still don't feel totally prepared, but it helped immensely. We're actually planning another one later in the week to review more.

5. I had a take home midterm that was sent out Thursday. We have until the following Friday to complete it. I didn't want to have to worry about my midterm and orals so I decided to start on the midterm on Thursday, and finish it up this weekend. I spent most of my morning on Sunday working on it (which was followed by that 3 hour study session...Sunday was a busy-brain day). I can proudly say that I've completed it and now I can focus all my energy on my Orals. Did I do the best possible job ever? No, but Orals have a whole lot more riding on them than this midterm. Priorities.

Wow, so I went running, baked, and did yoga....each one twice. Interesting theme this week.

Week 2: Jan 7th-13th and the waiting, the annoying waiting

I am beginning to love Mondays.
Who would have thought? The most despised day of the week by most would evolve into one of my favorites.
The thing is, I have a grueling schedule throughout the week. It is just go-go-go from 4am to some times as late as 9pm. It's filled with traffic, commuting, lectures, presentations, due dates, clients, more commuting, reading, supervision, deadlines, time frames, did I mention commuting? So it's easy Tue-Fri to feel like I am so far behind on absolutely everything and find it difficult to really clear my head and combat my responsibilities with a calm mind. The weekend allows for some of that, but even then I'm with my boyfriend much of the time and I would way rather spend time with him doing enjoyable things that studying/reading/school work/prepping for clients.
So here is where Monday comes in. While the rest of the world is going to work, I am home for the day. I plan out ahead of time what all needs to be accomplished on this day:
  • work out
  • Various school/dissertation responsibilities
  • Cooking for tonight and prepping/cooking for tomorrow when I don't get home until 9pm
  • Time for writing
  • A shower at some point and other various things
We've worked it out that J and I work out together Mon and Wed in the morning. We each have our own little routine we came up with ourselves (some variation of push-up/dips/sit-ups,etc). Then he goes to work, leaving me the house to myself. I fluctuate between school work, meal prepping, and breaks so as to never get burnt out doing either for too long. Mondays, unlike most days, I feel like I can actually breathe. I feel like I actually have some control over the whens, wheres, and whys of what I'm doing.

Now onto my list of 5 things:

1. Baked cookies....and brownies. I got to bake twice throughout this week. It helps that J is in love with my baking and is always game for me to bake anything so it's really killing 2 birds with 1 spoon ;)

2. Worked out the first time in a long while. As I said, J and I have started working out in the AM on some days doing our customized to fit us routines.
Mine:
5 push-ups
10 sit-ups
5 squats
5 dips
10 calf-raisers
10 lunges
20 crunches
(Repeat: total 3 times)
Then eventually, each week I will add 2 reps to each exercise.

It's amazing because even when I first came up with it I thought "meh... this is probably too easy for me and won't give me much of a work out" but then you have to remember that these numbers are actually x3 because you go through the routine 3 times. Plus, after the first day of doing it last week I couldn't walk right for days my legs were so sore! So, I'd say I gave myself a pretty good challenging start. I also made the mistake of not stretching before or after... so I learned my lesson there!

3. Used my crock-pot for the first time ever! I got this crock-pot probably back in about '05. I never used it, then I moved back in with my mom shortly before moving away to Hawaii which resulted in the thing being stashed away at my moms (who lord knows did not touch the thing) until this past Christmas break when we unexpectedly were driving back and I said "Oooh I have room to bring my crock-pot!" and was determined to make use of it, finally. Thank goodness it actually still worked, and it worked well. The meal was a success and I currently have tomorrow's dinner of creamy chicken chili cooking in there as I type. Yes.. I'm so on top of everything that I'm cooking tomorrow's dinner at 3 in the afternoon the day before. (except that whole "being on top of everything" will be completed destroyed as my 4am alarm goes off tomorrow morning, so just let me have it for now!)

4. Last night we went to see Craig Carothers play in Berkeley. This is a January tour he's done, apparently for about 10 years now with Don Henry and Steve Seskin. I surprised J with the show last year when he was playing in Santa Clara the weekend of J's birthday that he happened to be visiting me down in CA from Portland. It was perfect. Needless to say, when we found out he was playing less than 10 miles away in Berkeley, we knew we were going. It was, as always, a wonderful experience. We really need to make more time for events such as this, because it really is enjoyable for both of us.

5. This past week I booked our hotel for a trip to Vegas we're planning with my best friend and her boyfriend. Granted, the trip itself is not until May but planning for a vacation is quite enjoyable. Especially when you're able to get such a good deal, with the help of my dad and his timeshare he has there, we were able to get a great deal for our stay. May is both mine and my best friend's birthday month. This year (2013) Also marks 20 years of friendship with her. 20 years!! Other than those I'm related to, I have not had such a close, consistent relationship with anyone else in my life. So there are lots of reasons to celebrate and Vegas is just a wonderful place to do it! Not to mention, J has never been! So that will be exciting as well.

This past week has also been pretty frustrating for me. APA is the annual conference for psychology, it's a pretty big deal and it's especially important for me because it's in Hawaii this year. I haven't been back since I moved back to the mainland in '10. I've made it a mission of mine to submit/get accepted to APA '13 since I started grad school. Submission deadline for APA conference was Nov 15th. THe conference is not until August, so I assumed we'd be hearing back around March or so. All the sudden starting on Thursday, my Facebook wall is filled with a number of different people from my program posting "I got accepted to APA!" and "APA here I come" and other various celebratory comments about how excited they were about getting accepted. I started checking my email frantically, about 37 times a day, waiting to hear back. and nothing. Not a word.
I know I will hear back either way, whether I've been accepted or rejected, so the lack of hearing anything is not a bad sign necessarily. It is, however, excruciatingly annoying and frustrating.
Despite the progress I've made with having patience and not focusing on what I cannot control.. I still, really, really hate waiting...especially while everyone else seems to be rejoicing.
So I continue to play the waiting game.

There's always time for dinner, especially when it involves potatoes!

I've been in kind of a rut in terms of food.
It's finals time, so I am just sort of shoveling down whatever will make the growling in my stomach go away as I'm racing from here to there or writing/studying for hours upon hours.
It is so easy around this time to lose sight of what is really important, my health. I don't get as much sleep, I don't eat as well, my stress levels are heightened, I'm not running as much... it all sort of gets put on the back burner.
Today, nodding off in the library after an 8 hour day of brain power I decided it was time to head home.
I went grocery shopping not too long ago with the thought of "if I have good food in my apartment, I'm more likely to eat it."
This is true, except it takes time to make most of it, so I've been surviving off the grab-and-go foods I bought.
I decided that tonight that needed to change. Since I didn't have class tonight like I normally do, I was home earlier than usual and actually had the time to make a good dinner.
So I've got the time, I've got some good potential in terms of ingredients, but I am at a loss as to what to cook!
I decided to wing it and came up with a pretty great recipe and decided it's worth documenting for later.

Ingredients:
Red potatoes (the amount is flexible and will depend on how many people you're serving/how much leftovers you want and how big of a dish you're using)
Garlic Salt -to taste
Pepper -to taste
Butter (or butter substitute) - 1 1/2 to 2 tablespoons
Vegetable broth -3/4 cup
 Parmesan cheese (as topping)

Preheat the oven for 375 degrees.
  • Slice the red potatoes as thin or thick as you like, keeping in mind that the thicker they are, the longer it may take.
  • Layer them laying flat on the bottom of the baking dish (any old over-safe baking dish will do and again, size depends on how much you plan to make)
  • Season with garlic salt and pepper (or whatever seasonings you prefer on potatoes)
  • Repeat the last 2 steps: (layer potatoes & season)
  • Until you've used up your potatoes. (I had 2 layers in mine)
  • Next top with the butter. (just drop it on top, it will melt)
  • Lastly add the vegetable broth
Put the dish into the oven, uncovered, for about 10 minutes.
Stir the contents in the dish, then keep it in for another 5 min or so.
Next, Cover the dish with foil and keep in the over for about 15 or so minutes longer until more of the liquid is absorbed and the potatoes are soft when pierced with a fork.
(These times may differ depending on the oven, so just be aware of that)

This is how they looked when I removed them from the oven. There is still a fair amount of liquid in the pan, and that is fine.
Put them on a plate and top with some Parmesan cheese.

 Now they're ready to eat!
I paired mine with chicken and green beans, which were all delicious together, but they would be a good side for really any dish you'd normally eat potatoes with :)

I will most definitely be making these again. It was a pretty no-fuss dish, once you get them sliced and into the dish its just a matter of waiting for the oven to do it's thing.
If I can do it with my "grad-school" brain (that is what my peers and I have labeled all the lame mistakes we make in our daily functioning because our brains have turned to mush from all the studying/reading/writing) anyone can do it.

Chololate chip cupcakes

They will be topped with cream cheese frosting and mini chocolate chips in the morning.
We have a review session for our Research Comp. exam tomorrow for 4 hours. I decided sweets were necessary.
Plus, I am in need of some major stress relief, so it was more for me than anything.
Although, the stress is still there it is just now accompanied by 20+ cupcakes.
I went with a recipe I found on line that was really simple, and cut corners.
Now I wish I would have picked a different one. They taste alright, but I think I would feel more accomplished had I gone the old school, straight from scratch route.
Don't think I'll be saving this recipe in the archives of "Amazingly delicious and will definitely make again".

My head is spinning.

Here Lies Brandi's Mind. R.I.P.

Statistics midterm today= BRUTAL. One of my answers was as follows:

Needless to say, I don't think I'll be getting too many points for that one, although I did throw in some random numbers and multiply them, just for good measure.
My normal stress relievers are baking (of course) and lately, my running regimign that I've been doing.
I ran into 2 problems with those today:
1. My lungs are really, really hurtin. It feels like I've got rubber bands twisted tightly around my lungs and I just cant seem to break loose of them. Not even just while I'm running, literally, all throughout the day and even as I just sit here idly at my desk, I'm having troubles breathing. I decided that as much of a masochist as I've proven to be lately, that I needed to take the day off from running and let my lungs rest. This can't be good for them.
2. I tried out a new recipe tonight. Butterscotch oatmeal cookies (half the batch is butterscotch/chocolate chip)
I've never tried for oatmeal cookies  before. I usually just stick to my tried and true variations of regular cookie dough but thought I'd venture out. I'm not pleased with the results. I don't know if it's just the vanity in me seeping out, but I just feel like they don't look right, and therefore, they don't taste right.

I feel like a failure today. I didn't run, I bombed my midterm, AND I am disappointed in my cookies.
Baking is supposed to be the one thing, above all else, that I'm good at. I'm probably overreacting. I'm sure they taste just fine, but I wasn't going for fine, I was going for amazingly delicious.

Now I just need to prepare for my psychopharm midterm on Thursday, oh and pack, I should probably pack soon, since I'm leaving in less than 48 hours. I should also work on finding a ride to the airport as well.
I'm what you'd call a "slacker packer" ;)

Possible hypomania or just delusions of grandeur?

It's that time in the quarter, where everything seems to be piling up and the pressure is felt so strongly it's actually developed into somatic presentation.
Midterms, 15 page papers, exams, quizzes, lion and tigers and bears oh my!
Today was an 85 degree day. Not a cloud in the sky, beautiful California weather, and all day long I studied, crammed, sat in hours of lecture, took a midterm, sat in traffic, revised a paper and studied psychopharmocology terminology all with a pounding headache.
Surprisingly, I did this all with a smile. I'm having one of those days, where I should be cracking under the pressure like so many of my classmates, but instead I'm blissfully content with all this weight on my shoulders. It's possible I'm just dissociating from my actual problems and not actually realizing how stressed I am. I shouldn't complain though. I'd much rather be in this ignorant state of bliss than breaking down. It comes and goes. It's not like I actually have all my shit together, or that I need not be worried about things.
I think it is just the mind's way of protecting itself from pure and utter destruction.
I know that I am in fact stressed, because my number of baked goods produced is in direct proportion to my stress levels and my sporadic ideas for strawberry muffins at 1am a few nights ago and my inkling for baking cookies tonight is a sure fire sign I'm actually feeling the pressure.
It also never fails that when in these crunch times the amount of clothing and clutter in my bedroom multiplies exponentially. I will reach a point, where I clean and organize but not until after tomorrow. After that, we've got a few days to breathe before the next exams.
And on that note, I must be off, to bake something delicious. For my sanity, and the eating pleasure of my classmates tomorrow.
